South of the Border....4 Points!! (Salad)

2 frozen chicken breasts (skinless, boneless) thawed
1 can Rotel (chopped tomatoes with green chilies)
1 can black beans, drained
1 can pinto beans, drained
1/2 medium red pepper, cut bite size
1/2 medium green pepper, cut bite size
1/2 medium yellow pepper, cut bite size
1 tsp cumin
2 cloves garlic, chopped (or buy it already chopped 1 clove=1 tsp.)
1 tsp chili powder
1 Tbsp oregano
1 tsp salt
cilantro, finely chopped (guess on amount/about a handful)
1/2 cup feta cheese
lettuce

Crockpot: chicken, rotel, and spices on low all day!
1/2 hr. before serving: add peppers, beans, and chopped cilantro.
SHRED CHICKEN Serve over shredded romaine lettuce and sprinkle with feta cheese

Weigh-In #2

Just a comment

Way to go Kristi! You lost 3 cupcakes. Keep it up! Okay, I know I posted a loss of 4 cupcakes and that is really what the scale said. But I think it had something to do with it being that time of the month- I always gain weight and then lose it that week. But I'm not complaining! I know it is important to lose weight slowly because it will stay off better. I'm sure this week it will be a different story. But I'm still motivated and excited to start feeling a change in my body.

I think that is great because it's not going to be easy.. it is going to be painful.. but if you can endure the pain.. you will win! Maybe that will be a little helpful! :)
Hello Everyone!...
Sorry it's taken me so long to do this.. I just can't find a picture of myself alone, so I settled on this one with my husband and I... Just ignore him :) Anyways.. My name is Kristi Perez. I have struggled with weight my WHOLE life! I have tried SO many different diets and ways to lose weight. I do well for a while and then it never seems to fail I ALWAYS fall off the wagon. It seems so easy for the first month or two and then I just give up. I really want to meet my goal. I think Weight Watchers is great because you can still eat what you want it just teaches you portion contol. I have tried Weight Watchers before and it lasted a couple months and I fell off.. so this time will be my charm, I know I can do it! I am 21 years old and feel like an 80 year old grandma! I just got married in January and I want to do this for myself and to help my self esteem so my husband doesn't get frustrated with me :) I want to be able to run around with my kids (someday when I have them, not anytime soon :) I think it is a great idea to have support and help from other people... Anyways this is just a lot of gibberish! ha ha GOOD LUCK everyone! Until next time!

A Wannabe Skinny Cow....

Hello all! My name is Megan Lyman.... i have never been really "overweight" but, i have struggled with my weight and where i feel comfortable at. I am a little on the short side so i feel that any weight that i do gain, even though others don't see it, i can tell and feel and see it... it's all a personal issue. What i have found though, is that the best thing we can do for ourselves is be at a weight where we are comfortable and feel good about ourselves. Most of the time it doesn't even matter necessarily about the WEIGHT as much as it is about the inches and how we FIT into our clothes. I have worked for Gold's Gym now for 2 and 1/2 years (as the executive assistant to the owners). You would be extremely surpried as to how many people who work for us, are actually overweight, or have some of the worst eating habits i have ever seen... but at the same time, i have become friends with a lot of the trainers and people who have taught me a lot of important things when it comes to exercises, food, and eating habits. If you ever have any questions that you need answered, i have a lot of resources here and would love to help in any way that i can... and if any of you need gym memberships let me know because i can help you get the best deal out there....I am excited to have a support group, and to also be a help in any way...

Hello my skinny cow friends

My name is Peggy Moss. I'm Mindy's mother. I'm 48 years young and have 4 children, ages 15 to 25. I've been feeling very chubby this whole summer, actually for the past couple of years or so. As you get older your metabolism slows down and you gain your weight in your mid section. It sucks! I've lost weight on Weight Watchers before so I'm doing it again. I love WW because it makes you accountable for everything you put in your mouth but gives you freedom to work in some treats if you are craving something sweet. I'm pretty health minded so I want to use most, if not all of my points on healthy food- not on treats that sometime make me crave more! I also like to exercise and I love that you can earn more food points by exercising!! I'm really looking foward to start feeling my pants getting looser etc. Good luck everyone!

New Member... Introduction


Hi! My name is Mindy Sorenson. For as long as I can remember I've never been happy with my weight. I have tried Weight Watchers once before but had a hard time sticking with it because of the whole keeping track of points thing. I am hoping with this blog and the help from everyone out there that I will be able to meet my goal. My goal is to lose 20cupcakes:) Just a little about myself... I am 23, I married my wonderful husband, Remington on March 31, 2005 in the Salt Lake Temple. We live in Sandy and I am a hair stylist at Capelli Hair in Holladay. I love to SCRAPBOOK! I've always got some kind of project going, I love making crafts. If I wasn't a hair stylist, I would go into interior decorating, I think that would be so fun! I hate grocery shopping, I don't mind cooking(but don't have the time), but I LOVE food! Some of my favorites are... Rumbi's Calypso Spinich Salad, homemade bread and rolls, snowcones in the summertime, and fresh fruit!! I am excited for this blog and I hope that it can help us all meet our goals!

Weigh-IN!!

We are going to do weigh in a little bit different so that we don't have to share our weight with eachother:) You will first choose your goal... how many pounds do you want to lose? For example: I want to lose 20 pounds. Instead of saying pounds, we are going to say: I want to lose 20 cupcakes! Then on each weigh-in I will post every members name with their goal and then each person will have to log on individually and add how many cupcakes they lost or gained and then add or subtract from the total. For example: Week One... Mindy (20 cupcakes): gained 1 cupcake...21 to go, Kristi (50 cupcakes): lost 2 cupcakes...48 to go and so forth. We will do this each week at the beginning of the week. So keep an eye out for the Weigh-in post so you can add your results. This will help us to be true to ourselves when we have other people keeping an eye on us and encouraging us to keep on keeping on:)
